A refined and vibrant cup that still feels rooted in the Burundi tradition, but with a little something extra. In the cup, expect lots of red berries, supported by a bright acidity and smoothness of marmelade, raisins and maple syrup. It’s sweet, bright, and just a little wild, in the best way.

We’re thrilled to welcome this expressive new lot from Butegana Washing Station, the very first washing station built in Burundi back in 1952. Perched in the northern region of Kayanza, Butegana has long been a hub for quality and innovation, and this coffee is no exception.
What makes this one special? A carefully designed yeast fermentation process that takes the classic Burundi profile and dials up the fruit.
After harvesting and sorting, the coffee cherries are pulped and placed in epoxy-coated, concrete fermentation tanks. Here, CIMA yeast is introduced, strain developed specifically for coffee fermentation. The seeds ferment in a controlled environment, protected from spoilage organises that could cause off-flavors.
The CIMA yeast does more than just keep things clean, it actively brings out fresh, fruity characteristics while preserving the unique identity of the coffee’s varietal. The yeast is able to control the fermentation process and reduce the risk of spoilage micro-organisms that can generate undesirable defects. Furthermore, its specific metabolism and its high capacity, even at cold temperatures (minimum 15°C inside the coffee tank), allow for the expression of fresh and fruity characteristics, even at higher altitudes.

Orders will be delivered to the address indicated in the order form after receipt of the order. Orders are shipped every Monday and Friday. The delivery of orders is performed by carrier Bpost or DPD, or in some specific cases by another carrier.

Select 'pick-up' at checkout and pick-up your order directly at the roastery when ready (! NEW address ! A. Vaucampslaan 28, unit 8, 1654 Huizingen, Belgium). No shipping costs will be applied.
You will be notified by email when your order is ready for pick up, usually within 1-2 days. Pick-up is possible on Monday and Tuesday, or any other day of the week upon request, please send us a message before (+32479520729 or info@gust.coffee) so we make sure someone is present.
