This anaerobic processed Sarchimor lot has sweet, winey and creamy aroma's with intense notes of dark chocolate, sweet cherry and pecan pie. Its mouthfeel is clean, elegant and fruity, with a mellow acidity of mandarin and kiwi aftertaste.

Second-generation coffee producer José Enrique Gutierrez is dedicated to producing high-quality coffees in a sustainable manner. José rebuilds all his plantations from scratch, replaces old coffee trees with resistant, modern hybrids, and also plants shade-providing trees and other nitrogen-fixing crops.
In this exceptional lot of a Sarchimor variety, a hybrid of Timor-Leste and Villa Sarchi, the selectively harvested cherries are sorted by hand and then fermented in hermetically sealed bags for 68-72 hours.
After the anaerobic fermentation process is finished, the cherries are spread on raised beds and slowly dried in the sun for 30-32 days.
The process of anaerobic fermentation creates extremely fruity and winey flavours.
