This coffee has complex flavours with super juicy notes of raspberry and peach, and a syrupy finish of almonds and maple. Very structured and clean, it has great depth and layers.

Apolonio Canales is a coffee producer in the small town of Masaguara, in the mountainous Intibuca. Apolonio has always lived in the area and started growing coffee a decade ago when he managed to buy 8 hectares of land to found Finca El Picacho.
Given the small size of the farm, Apolonio preferred to focus on obtaining a high-quality product instead of quantity. After harvesting, there is a further selection to remove any unripe cherries that may have been inadvertently harvested. The skin and mucilage are then removed and after the coffee beans are fermented for 12 hours, they are dried on raised beds for a period of 15-20 days.
