This coffee from Alonso Bustos is one of a kind. Alonso has used anaerobic fermentation for 120 hours in sealed bags, removing the oxygen and then dried in cherry (natural). This extremely complex process deepens and enhances the flavors of the coffee with winey and fruity notes of orange, plum, dark chocolate and dates.

Alonso Bustos is a second-generation coffee producer who’s been cultivating coffee for over 50 years. He has spent the last several years experimenting and pushing coffee innovation in his El Mirador farm.
In 2017 he has planted the unique Pacamara varietal, a hybrid of the Pacas and the giant Maragogype varietals. Pacamara is a low-yielding, intensely sweet coffee varietal, not often grown in Colombia.
