Chapadão de Ferro is a volcanic soil crater located in the Cerrado Mineiro, a mix of grassy savannah, scrublands and forests with a rich biodiversity. It is the largest woodland savannah in South America. The warm day and cool nights aid the slower development of sweet, dense beans.
The Rossini family is able to maintain their dedication to specialty production through every step of the process and harvest only fully ripe cherries. They are specialized in natural processing where the cherry is typically laid to dry in thin layers on patios under direct sunlight, bringing an additional sweetness to the coffee.
