The Shembati washing station has been built by Salum Ramadhan in 2016, there is a clean natural water source and about 200 drying tables. Salum is extremely detail oriented, spends a lot of time training local staff and has a great loyal workforce. He's also investing in social and environmental projects in the local area's.
The main harvest will normally start around April-May where the family members on the small farms pick the cherries themselves and deliver them to the washing station by foot or bicycle. The coffees are then sorted to exclude the un-ripe and over-ripe beans once more. They process the beans with a 12-hour dry fermentation, before soaking 12-18 hours in clean water. From there it goes to pre drying under shade before entering the elevated and sun exposed drying tables. Drying normally takes 15–20 days depending on the climate and rainfall.
